Fractionation Principle: Natural oils are mixtures of various triglycerides, due to different types of fatty acid for composition of triglycerides, and the different distribution of fatty acids in the molecule, leading to differences in triglycerides on the physical and chemical properties, the process to grade these triglycerides with different properties is oil fractionation.

Fractionation method: According to its characteristics of cooling crystallization and separation processes, fractionation process is divided into conventional method, surfactant method, solvent method and liquid-liquid extraction method, and so on. Olein yield = [(raw IV- stearin IV) / (liquid oil IV -stearin IV)] * 100%

Stearin yield = [(liquid oil IV- raw IV) / (liquid oil IV-stearin IV)] * 100%

Acid value of palm oil is higher, color is darker, less gum, suitable for physical refining, in order to improve the refining rate.
